Kadhi 


Kadi, also known as Kadhi, is a popular North Indian dish made with yogurt and gram flour (besan), flavored with spices and often accompanied by pakoras (fried fritters). Here's a traditional recipe to make this tangy and comforting dish:

Ingredients:

For Kadhi:
  • 1 cup yogurt
  • 2 tbsp gram flour (besan)
  • 2 cups water
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1/2 tsp fenugreek seeds (methi)
  • 2-3 green chilies, slit
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

For Pakoras (optional):

  • 1/2 cup gram flour
  • 1 onion, finely chopped
  • 1 green chili, finely chopped
  • 1/2 tsp turmeric powder
  • Salt to taste
  • Oil for frying

Recipe:

For Kadhi:
  • In a bowl, whisk yogurt and gram flour together until smooth.
  • Heat oil in a pan and add cumin seeds, mustard seeds, and fenugreek seeds. Let them splutter.
  • Add chopped onions and sauté until golden brown.
  • Add ginger-garlic paste and slit green chilies. Sauté for 2 minutes.
  • Add chopped tomatoes and cook until soft.
  • Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  • Slowly add the yogurt mixture to the pan while continuously stirring to prevent lumps.
  • Add water and bring the mixture to a boil. Reduce the heat and simmer for 15-20 minutes until the kadhi thickens.
  • Garnish with fresh coriander leaves.
For Pakoras (optional):
  • In a bowl, mix gram flour, chopped onions, green chili, turmeric powder, and salt.
  • Add water gradually to form a thick batter.
  • Heat oil in a pan for frying. Drop spoonfuls of the batter into the hot oil and fry until golden brown.
  • Drain the pakoras on paper towels.
  • Serve the kadhi hot with rice or roti, garnished with pakoras if desired. Enjoy the comforting and flavorful kadhi!
