Malai Kofta

Malai Kofta is a rich and indulgent Indian dish consisting of deep-fried dumplings made from paneer and mashed potatoes, served in a creamy and flavorful gravy. Here's a recipe to make this delightful dish:

Ingredients:

For Koftas:

  • 200g paneer, grated
  • 2 medium-sized potatoes, boiled and mashed
  • 2 tbsp corn flour
  • 1/4 cup mixed dry fruits (cashews, almonds, raisins), chopped
  • 1 tsp ginger-garlic paste
  • 1/2 tsp garam masala powder
  • Salt to taste
  • Oil for frying

For Gravy:

  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1/4 cup cashew nuts, soaked in water
  • 1/4 cup fresh cream
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala powder
  • Salt to taste
  • 2 tbsp oil or ghee
  • Fresh coriander leaves for garnish

Recipe:

For Koftas:

  • In a bowl, mix grated paneer, mashed potatoes, corn flour, chopped dry fruits, ginger-garlic paste, garam masala powder, and salt.
  • Shape the mixture into small balls and deep-fry until golden brown. Drain and set aside.

For Gravy:

  • Heat oil in a pan and add cumin seeds. Let them splutter.
  • Add chopped onions and sauté until golden brown.
  • Add ginger-garlic paste and sauté for 2 minutes.
  • Add tomato puree and cook until the oil separates.
  • Meanwhile, blend soaked cashews with water to make a smooth paste.
  • Add cashew paste to the pan and mix well.
  • Add coriander powder, turmeric powder, red chili powder, garam masala powder, and salt. Cook for a few minutes.
  • Add fresh cream and mix well.
  • Add water to achieve the desired consistency and bring the gravy to a simmer.
  • Gently add the fried koftas to the gravy and simmer for 2-3 minutes.
  • Garnish with fresh coriander leaves.
