Malai Kofta
Malai Kofta is a rich and indulgent Indian dish consisting of deep-fried dumplings made from paneer and mashed potatoes, served in a creamy and flavorful gravy. Here's a recipe to make this delightful dish:
Ingredients:
For Koftas:
- 200g paneer, grated
- 2 medium-sized potatoes, boiled and mashed
- 2 tbsp corn flour
- 1/4 cup mixed dry fruits (cashews, almonds, raisins), chopped
- 1 tsp ginger-garlic paste
- 1/2 tsp garam masala powder
- Salt to taste
- Oil for frying
For Gravy:
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 1/4 cup cashew nuts, soaked in water
- 1/4 cup fresh cream
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala powder
- Salt to taste
- 2 tbsp oil or ghee
- Fresh coriander leaves for garnish
Recipe:
For Koftas:
- In a bowl, mix grated paneer, mashed potatoes, corn flour, chopped dry fruits, ginger-garlic paste, garam masala powder, and salt.
- Shape the mixture into small balls and deep-fry until golden brown. Drain and set aside.
For Gravy:
- Heat oil in a pan and add cumin seeds. Let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for 2 minutes.
- Add tomato puree and cook until the oil separates.
- Meanwhile, blend soaked cashews with water to make a smooth paste.
- Add cashew paste to the pan and mix well.
- Add coriander powder, turmeric powder, red chili powder, garam masala powder, and salt. Cook for a few minutes.
- Add fresh cream and mix well.
- Add water to achieve the desired consistency and bring the gravy to a simmer.
- Gently add the fried koftas to the gravy and simmer for 2-3 minutes.
- Garnish with fresh coriander leaves.
