Ingredients:For Gatte:

  • Besan (gram flour)
  • Yogurt
  • Oil
  • Ajwain (carom seeds)
  • Salt
  • Red chili powder
  • Turmeric powder
  • Coriander powder

For Gravy:

  • Cumin seeds
  • Asafoetida (hing)
  • Ginger-garlic paste
  • Tomatoes
  • Yogurt
  • Red chili powder
  • Turmeric powder
  • Garam masala
  • Coriander leaves

Recipe:

Prepare the gatte by mixing besan, yogurt, oil, ajwain, salt, red chili powder, turmeric powder, and coriander powder to form a dough.

Shape the dough into cylindrical logs and boil until cooked.

Cut the cooked gatte into small pieces.

Prepare the gravy by sautéing cumin seeds, hing, and ginger-garlic paste in oil.

Add tomatoes, yogurt, red chili powder, turmeric powder, garam masala, and salt. Cook until the oil separates.

Add the gatte pieces to the gravy and simmer until the flavors blend.

Garnish with coriander leaves and serve hot with roti or rice for a truly authentic Rajasthani culinary experience.
