Stuffed Capsicum


Aloo stuffed capsicum is a delightful dish where bell peppers are filled with a savory potato filling. Here's a straightforward recipe:

Ingredients:

  • 4 large bell peppers (capsicum)
  • 3 medium-sized potatoes, boiled and mashed
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 2 green chilies, finely chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala powder
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish


Recipe:

  • Preheat the oven to 180°C (350°F).
  • Cut the tops off the bell peppers and remove the seeds.
  • Heat oil in a pan, add cumin seeds, and let them splutter.
  • Add chopped onion, green chilies, and ginger-garlic paste. Sauté until onions turn translucent.
  • Add chopped tomatoes and cook until soft.
  • Add mashed potatoes, turmeric powder, red chili powder, garam masala powder, and salt. Mix well.
  • Stuff the bell peppers with the potato mixture.
  • Place the stuffed bell peppers on a baking tray and bake for 25-30 minutes until they are tender.
