Aloo stuffed capsicum is a delightful dish where bell peppers are filled with a savory potato filling. Here's a straightforward recipe:
Ingredients:
- 4 large bell peppers (capsicum)
- 3 medium-sized potatoes, boiled and mashed
- 2 green chilies, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp garam masala powder
- Fresh coriander leaves for garnish
Recipe:
- Preheat the oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds.
- Heat oil in a pan, add cumin seeds, and let them splutter.
- Add chopped onion, green chilies, and ginger-garlic paste. Sauté until onions turn translucent.
- Add chopped tomatoes and cook until soft.
- Add mashed potatoes, turmeric powder, red chili powder, garam masala powder, and salt. Mix well.
- Stuff the bell peppers with the potato mixture.
- Place the stuffed bell peppers on a baking tray and bake for 25-30 minutes until they are tender.
