MANCHOW SOUP




Manchow Soup is a popular Indo-Chinese soup known for its spicy and flavorful taste. It's a perfect blend of vegetables, noodles, and a variety of spices. Here's a simple recipe for Manchow Soup:

Ingredients:

  • 1/4 cup finely chopped cabbage
  • 1/4 cup finely chopped carrots
  • 1/4 cup finely chopped bell peppers (capsicum)
  • 1/4 cup finely chopped French beans
  • 1/4 cup finely chopped spring onions
  • 2 tablespoons finely chopped garlic
  • 1 tablespoon finely chopped ginger
  • 2 tablespoons oil
  • 1 tablespoon soy sauce
  • 1 tablespoon chili sauce
  • 1 tablespoon vinegar
  • 1 tablespoon cornflour mixed with 1/4 cup water
  • 4 cups vegetable stock
  • Salt and pepper to taste
  • Fried noodles for garnish
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat oil in a wok or large pot. Add chopped garlic and ginger. Sauté for a minute until they release their aroma.

  2. Add chopped spring onions and sauté for another minute.

  3. Add all the chopped vegetables - cabbage, carrots, bell peppers, and French beans. Stir-fry on high heat for 2-3 minutes.

  4. Pour in the soy sauce, chili sauce, and vinegar. Mix well.

  5. Add the vegetable stock. Bring it to a boil and let it simmer for 5-7 minutes until the vegetables are tender.

  6. Season the soup with salt and pepper according to taste.

  7. Slowly pour in the cornflour-water mixture while stirring continuously to avoid lumps. Let the soup thicken.

  8. Once the soup reaches the desired consistency, turn off the heat.

  9. Ladle the soup into bowls. Garnish with fried noodles and fresh coriander leaves.
